Crispy Chicken Nuggets – With Tangy BBQ Sauce

Crispy Chicken Nuggets are a big hit around here.  But they don’t like the ones you buy at the store.  Which is great actually because I hate buying them.

There is just something so satisfying about having homemade chicken nuggets!  Not full of fillers, or other junk, and the taste is a hundred times better when you make them from scratch!  This recipe, is SO simple.  It’s a bit of a process, but not terribly long, and the recipe is so easy it can be thrown together in minutes!  The tangy sauce is the perfect addition to these crispy nuggets.

Ingredients:

2 sleeves of ritz crackers crushed
1 tsp. salt
1 tsp. pepper
1 ½ cups coconut milk
1 ½ pounds boneless skinless chicken cut into 1-inch pieces
BBQ Sauce:
15 ounces of tomato sauce
1/3 cup apple cider vinegar
1 tsp. garlic powder
1 tsp. onion powder
2/3 cup honey
Oil for frying
½ tsp. salt ½ tsp. pepper

Directions:

Mix together the crushed crackers, salt and pepper in shallow bowl.  Pour milk into separate shallow bowl.  Place 4-5 nuggets in milk, and then coat in crushed cracker mixture.  Deep fry at 350 degrees for 3-4 minutes.  Remove and place on paper towel.  Repeat until you have finished all the chicken.
For the BBQ sauce, mix all ingredients together in medium sauce pan.  Bring to a boil, then reduce heat to low and simmer for 25 minutes (while you are frying your chicken).  Can be served with the nuggets warm, or allow to cool first.
