This is a delicious twist on the classic German Puff Pancake! It is sweet, and savory with a bit of citrus all rolled into one delicious breakfast dish! The kids will love to watch it puff up in the oven too!
Citrus Puff Pancakes ~Dairy Free~
Preheat oven to 425 degrees.
While oven is heating mix together eggs, sugar, almond milk, flour, orange zest and orange juice. Mix until smooth, and not lumpy.
Put 2 Tb. Butter into 9×13 pan and put in the oven to melt the butter for 2-3 minutes.
Once butter is melted promptly remove pan from oven and pour batter into pan.
Remove from oven, allow to cool slightly and dust with powdered sugar if desired!
*It will be puffed up quite a bit, and you will know it’s done when the center is a tad golden browned. The puff will fall some when pulled out of the oven. This is normal. Serve with your favorite fruits, and a glass of orange juice for the perfect breakfast!
