Citrus Puff Pancakes ~Dairy Free~

  1. Preheat oven to 425 degrees.
  2. While oven is heating mix together eggs, sugar, almond milk, flour, orange zest and orange juice. Mix until smooth, and not lumpy.
  3. Put 2 Tb. Butter into 9×13 pan and put in the oven to melt the butter for 2-3 minutes.
  4. Once butter is melted promptly remove pan from oven and pour batter into pan.
  5. Bake for 16-19 minutes.
  6. Remove from oven, allow to cool slightly and dust with powdered sugar if desired!
Recipe Notes

*It will be puffed up quite a bit, and you will know it’s done when the center is a tad golden browned. The puff will fall some when pulled out of the oven. This is normal. Serve with your favorite fruits, and a glass of orange juice for the perfect breakfast!
