In our family, we have a lot of recipes that call for Cream of Chicken Soup. We’ve had to go dairy free due to allergies and lactose intolerance for a few of us. So, I came up with this recipe. It took a few tries to get it just right, but it’s since become our go-to recipe for all of those dishes! You will not even notice that it doesn’t have REAL butter or milk in it. Everyone in our family loves it. We even used it on toast one night, just as a chicken gravy! That’s how much the kids love it. So, give it a try, share with friends.
Soup that's dairy free and creamy - Cream of Chicken Soup
A delicious Dairy Free recipe, that can be used in many ways! Simple to make up, very few ingredients, and one that even those who LOVE milk won't know it's missing!
Melt butter in medium sauce pan. Add onion powder, and bouillon cubes and mix well. Once those are mixed well, add cornstarch and whisk thoroughly, to make a thick paste-like mixture. Continue to whisk for about 1 minute.
Add chicken stock, bring to boil and allow to thicken. Test once thickened and add salt and pepper as needed.
Once this has thickened slowly stir in coconut milk. Bring back to a boil, and allow to thicken as well. Add chicken, and more salt and pepper if needed. Serve.
