Ingredients
Graham Cracker crust:
- 1 cup crushed graham crackers
- 2 tb. Brown sugar
- 4 tb. Melted butter
Strawberry Topping
- 1 lb. strawberries sliced up
- 2 tb. sugar
Filling:
- 2 pkgs. cream cheese softened
- ½ cup lime juice
- ½ cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1 Zest of 1 lime

Instructions
- Mix together brown sugar, crushed crackers and melted butter.
- Press into cupcake pans filled with liners. Make sure they are pressed down firm.
- Blend cream cheese with sugar until smooth and creamy.
- Add lime juice, vanilla, and zest.
- Add eggs one at a time until just incorporated in and smooth.
- Add to the top of each cupcake liner about 1/3 from the top.
- Bake at 350 degrees for 17-20 minutes.
- Remove and allow to cool
- While cooling mix together sugar and strawberries and allow to rest.
- Serve on top of cheesecakes and enjoy!
