- Begin by cooking kielbasa in large saute pan over medium heat until slightly caramelized. Remove sausage and set aside.
- In same pan, melt butter and olive oil into the pan. Add peppers and cook until softened.
- At the same time get a large pot of water boiling. Salt water and add pasta.
- Add sausage back in to pan with butter and olive oil, and add the lemon juice and pasta water from the pasta cooking. Bring to boil, and let simmer. The pasta water will thicken the sauce a bit allowing it to coat the pasta well. Add salt and Pepper to taste as the sauce simmers.
- Drain off the pasta, and return to pot. Pour the sausage and sauce mixture over the pasta, mix thoroughly and enjoy!
* Save the other half of the peppers and freeze - ready for another quick meal!
**To make this a dairy free dish, simply substitute your favorite non-dairy butter here.
***Remove pasta water from the pot once the pasta has cooked in it 4-5 minutes. This will provide a starchy water to thicken your sauce just slightly.
